
Tofu and Vegetable Stir Fry with Peanut Sauce

Tofu stir fry in peanut sauce is a combination of crispy tofu , roasted veggies and garlicky gingery sweet and spicy peanut sauce served with your choice of rice and noodles. It is a hearty and delicious meal which is healthy and quick to make.
This stir fry is vegan and dairy free and perfect for busy weekend nights . Tofu is an excellent source of lean protein and iron and the peanut sauce also have good amount of iron, fiber and plant based fats.

Ingredients notes :

Tofu: Extra firm tofu is best to achieve the crispy texture.
Peanut butter : Use creamy, unsalted peanut butter , not the crunchy ones.
Vegetables : I used broccoli, pepper and carrots for the recipe. You can use cabbage, mushrooms , bean sprouts or any other vegetable of your choice.
Aromatics : Ginger garlic and fresh coriander.
Soy sauce: You can use tamari for gluten free version. Just check the label first.
Sriracha: You can adjust the amount according to your taste.

Peanut sauce

Tofu and Vegetable stir fry in Peanut Sauce
Ingredients
- 500 gms Extra firm Tofu drained and pressed for 20 mins
- 2 tbsp Sesame oil or vegetable oil
- 1 large head of broccoli chopped into small floretts
- 1 red or yellow pepper sliced thinly.
- 1 Carrot sliced in match sticks
For Peanut sauce
- ½ cup unsalted creamy peanut butter
- 2 tbsp soy sauce
- 1 tbsp lime juice
- 1 tbsp ginger minced
- 2-3 cloves garlic grated
- 1 tbsp toasted sesame oil
- 2 tsp sriracha (or add just 1 tsp chilli flakes )
- ⅓ cup warm water
- 1 tsp brown sugar (Optional)
Optional sides and toppings
- Noodles of choice or rice
- Crushed peanuts
- Spring onion greens
- Fresh coriander chopped
- Toasted sesame seeds
- Chiili flakes
Instructions
Tofu
- Drain tofu, remove excess water , wrap in a dish towel and place a heavy object on top for 20 mins . This is important for crispy tofu.
- Cut the pressed tofu in 1 inch cubes or triangles. Heat 1 tbsp sesame oil on medium heat in a large non stick pan.
- Once the oil is warm add the tofu evenly spaced out in the pan with no overlaps. Cook for 5-7 minutes per side or until golden and crispy.
- While tofu is cooking make the sauce. In a food processor or blender combine the peanut sauce ingredients and blend until well combined. Adjust the consistency by adding more water.
Stir fry Vegetables
- Once cooked , remove the tofu from the pan and keep aside. Add 1 tbsp sesame oil and when oil is warm , add broccoli, pepper and carrots to the pan.
- Cook on medium high heat for 8-10 minutes or until cooked to your liking.
Assembly:
- Add the tofu back to the pan with the stir fried vegetables. Drizzle ¾ of the sauce and toss until well combined.
- Serve itself or with rice or noodles. Drizzle some extra sauce on the top.
- Top with crushed peanuts, chopped spring onion and coriander , toasted sesame seeds and chiili flakes.
