Tofu and Vegetable stir fry in Peanut Sauce

Crispy Tofu and roasted vegetables in a sweet and spicy home made mouthwatering peanut sauce. A quick and super flavorful meal which is vegan, dairy free and high in protein and fibre.

Ingredients
  

  • 500 gms Extra firm Tofu drained and pressed for 20 mins
  • 2 tbsp Sesame oil or vegetable oil
  • 1 large head of broccoli chopped into small floretts
  • 1 red or yellow pepper sliced thinly.
  • 1 Carrot sliced in match sticks

For Peanut sauce

  • ½ cup unsalted creamy peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tbsp ginger minced
  • 2-3 cloves garlic grated
  • 1 tbsp toasted sesame oil
  • 2 tsp sriracha (or add just 1 tsp chilli flakes )
  • cup warm water
  • 1 tsp brown sugar (Optional)

Optional sides and toppings

  • Noodles of choice or rice
  • Crushed peanuts
  • Spring onion greens
  • Fresh coriander chopped
  • Toasted sesame seeds
  • Chiili flakes

Instructions
 

Tofu

  • Drain tofu, remove excess water , wrap in a dish towel and place a heavy object on top for 20 mins . This is important for crispy tofu.
  • Cut the pressed tofu in 1 inch cubes or triangles. Heat 1 tbsp sesame oil on medium heat in a large non stick pan.
  • Once the oil is warm add the tofu evenly spaced out in the pan with no overlaps. Cook for 5-7 minutes per side or until golden and crispy.
  • While tofu is cooking make the sauce. In a food processor or blender combine the peanut sauce ingredients and blend until well combined. Adjust the consistency by adding more water.

Stir fry Vegetables

  • Once cooked , remove the tofu from the pan and keep aside. Add 1 tbsp sesame oil and when oil is warm , add broccoli, pepper and carrots to the pan.
  • Cook on medium high heat for 8-10 minutes or until cooked to your liking.

Assembly:

  • Add the tofu back to the pan with the stir fried vegetables. Drizzle ¾ of the sauce and toss until well combined.
  • Serve itself or with rice or noodles. Drizzle some extra sauce on the top.
  • Top with crushed peanuts, chopped spring onion and coriander , toasted sesame seeds and chiili flakes.
