Nutella Palmiers /Easiest Cookies Ever

Palmier is a French cookie which is light , airy , buttery , super delicious and made with just 3 ingredients!! They are incredibly simple to make and it will definitely be your favorite cookie once you take the first bite! Also known as Elephant ears, French Hearts or Palm leaves, palmiers are fun and quick to make and need no fancy tools. Traditionally, palmiers are made with just puff pastry and sugar, however they are often made with different fillings like melted chocolate, jam or even savory ingredients!

For this version, I chose nutella for a chocolatey twist !! They can be stored in an air tight container for upto 2 weeks ( if you can resist them for that long! )

I used fresh store bought puff pastry ! If you are using frozen one, thaw it overnight in fridge or for 30-40 minutes on kitchen counter. It is important that it should be pliable , but still cold.

STEPS:

 

          

Ingredients:

  • Puff pastry sheet : 1 (store bought )
  • Granulated Sugar: 1/4 cup
  • Nutella: approx 3/4 cup (use more if needed)

Method :

  • Unfold the puff pastry sheet on baking paper. Use a rolling pin to lightly roll it and smoothen the dough a bit.
  • Spread the nutella in an even layer over the sheet.
  • Starting with the longer sides of the sheet, fold the sides towards the center so they go half way to the middle. Fold them again, so the two folds meet exactly at the middle of the dough. Then fold one half over the other half like closing a book. This will make , very long flat dough with the first two folds sandwiched in the middle. Press gently so the folds stay together.
  • Cover carefully with a plastic wrap/ cling film and refrigerate for 15 minutes. This will make them easier to cut .
  • In the mean time , preheat the oven to 190 degree C/ 375  degree F. Line a baking tray with parchment paper
  • After chilling, take the log out  carefully on work surface and using a sharp knife slice the dough into  approx 1/4 inch slices.
  • Dip each slice carefully into sugar and arrange the cookies on parchment paper lined baking tray, few inches apart. They will puff up a lot in the oven so we need to give them room to spread. Bake in batches if necessary.
  • Bake palmiers in the middle of the oven for 12-15 minutes until puffy and golden .
  • Transfer to a baking rack to cool completely. They will become crispier as they cool. Store them in an air tight container once completely cold.
  • Enjoy!!

  1. Thanks Prerna. Super easy and Yummy recipe. Even the kids could follow and make it on their own. It has now become a regular tea time snack in our house.
