A hearty snack bar , these no bake nutritious bars combine the natural sweetness of dates with a mix of seeds and almonds for a healthy treat that is vegan and gluten free. These bars are rich in protein, fiber, antioxidants, omega-3 fatty acids and many other vitamins and minerals.
These chocolate super food bars have carbohydrate from the dates and a mix of protein and healthy fats from seeds and almonds . The balance of carbs and protein is the key for feeling full and energized.
These bars are made in a food processor and there is no baking and cooking involved. They can be easily customized so you can swap out ingredients based on your taste preferences or dietary requirements.
Ingredients required :
Almonds : Almond flour is ground blanched almonds and it binds the ingredients together. It is available in baking section in supermarkets.
Seeds : High in fibre , vitamins and minerals (like Vit E, zinc and magnesium) and unsaturated fatty acids. I have used store bought combination of milled flax seeds, sunflower seeds and pumpkin seeds. You can use them whole and process in food processor or just go for the milled ones . You can use any combinations of seeds you have available . Just add a total of 1/2 cup.
Cocoa Powder: It gives the bars a rich, chocolate flavor. Make sure to use the unsweetened version. Cacao powder can be used too.
Dates : Dates make the base of the bars and bind everything together . Use soft , moist dates like medjool dates . If your dates are dry, soak them in warm water for 15 mins, drain the water and then use them.
Vanilla extract: For the flavor.
Dark Chocolate : Dark chocolate coating for the amazing chocolate shell which make them feel like a healthy indulgence.

No Bake Chocolate Superfood Bars
Ingredients
- 1 Cup Almond Powder
- 2 tbsp Chia seeds
- 1/2 Cup tightly packed, combination of milled flax seeds, sunflower seeds and pumpkin seeds
- 1 tbsp Cocoa powder
- 1.5 Cup Tightly packed soft, moist pitted dates (12-13 Dates)
- 1/4 Cup Chocolate chips
- ½ tsp Vanilla Extract
- 2 tbsp Golden syrup (or maple syrup)
- 100 gms Dark Chocolate
Instructions
- Add all the ingredients except chocolate and chocolate chips into a food processor and process until it forms a thick, sticky dough . It the mix is not sticking together, add 1 tbsp of warm water and process again.
- Add chocolate chips (if using ) and pulse 4-5 times, until evenly mixed with other ingredients.
- Line a 7x7 square baking pan with 2 strips of parchment paper so they stick out the sides of the pan. Transfer the mix to the lined baking pan and press down firmly and evenly with your hands (Pressing is important for making the bars stick together)
- Chop the chocolate finely in small pieces. Melt it in a microwave safe bowl in a microwave in 15 seconds increments , stirring often.
- Pour the chocolate on bars and spread it evenly using a spatula. Keep the chocolate in fridge for 1/2-1 hour or until the chocolate has hardened.
- To slice the squares , let them sit at room temperature for 10 minutes to prevent chocolate cracking.
- Slice into squares and store in refrigerator. Enjoy!
