No Bake Chocolate Superfood Bars

A healthy snack bar , packed with vitamin, minerals and high in protein. Vegan, gluten free naturally sweetened and tastes delicious!

Ingredients
  

  • 1 Cup Almond Powder
  • 2 tbsp Chia seeds
  • 1/2 Cup tightly packed, combination of milled flax seeds, sunflower seeds and pumpkin seeds
  • 1 tbsp Cocoa powder
  • 1.5 Cup Tightly packed soft, moist pitted dates (12-13 Dates)
  • 1/4 Cup Chocolate chips
  • ½ tsp Vanilla Extract
  • 2 tbsp Golden syrup (or maple syrup)
  • 100 gms Dark Chocolate

Instructions
 

  • Add all the ingredients except chocolate and chocolate chips into a food processor and process until it forms a thick, sticky dough . It the mix is not sticking together, add 1 tbsp of warm water and process again.
  • Add chocolate chips (if using ) and pulse 4-5 times, until evenly mixed with other ingredients.
  • Line a 7x7 square baking pan with 2 strips of parchment paper so they stick out the sides of the pan. Transfer the mix to the lined baking pan and press down firmly and evenly with your hands (Pressing is important for making the bars stick together)
  • Chop the chocolate finely in small pieces. Melt it in a microwave safe bowl in a microwave in 15 seconds increments , stirring often.
  • Pour the chocolate on bars and spread it evenly using a spatula. Keep the chocolate in fridge for 1/2-1 hour or until the chocolate has hardened.
  • To slice the squares , let them sit at room temperature for 10 minutes to prevent chocolate cracking.
  • Slice into squares and store in refrigerator. Enjoy!
