Eggless Gulab Jamun Mix Cake

 

Eggless Gulab Jamun Cake is a scrumptious cake made with gulab jamun ready mix  available in markets. It has the delicious flavor of gulab jamun and its guilt free treat  as there is no deep frying and drenching in sugar syrup involved!!

I find making gulab jamuns very time taking and tedious, so when I saw this recipe a few days ago, I decided to use the packets of instant gulab jamun mix I had in my pantry. The cake came out very soft and delicious ! Ready with easily available ingredients, this cake doesn’t need any special equipment or mixers!!

Course: Dessert    Meal:  Vegetarian   Serves: 4-5

Ingredients:

  • Instant Gulab Jamun Mix : 3/4 cup ( any brand is fine )
  • Sugar:  powdered, 3/4 cup + 2tbsp  (adjust if you want it sweeter)
  • All purpose flour/ Maida: 3/4 cup
  • Baking Powder: 1/2 tsp
  • Baking soda: 1/4 tsp
  • Fresh Cream: 1/2 cup
  • Milk: 1/2 cup (at room temperature)
  • Cardamom powder: 1 tsp
  • Vegetable oil/ any odorless oil : 1/4 cup
  • Sliced Pistachios and Almonds: 2 tbsp

Method:

  • Preheat the oven to 350 degree Fahrenheit or 180 degree centigrade.
  • Prepare a 8×8 inch pan by lining it with parchment paper or greasing it.
  • Take gulab jamun mix and powdered sugar in a mixer jar and run once.
  • Now, in a large mixing bowl sift together all purpose flour, baking powder, baking soda and cardamom powder so they get mixed thoroughly.
  • Add the powdered sugar and gulab jamun mix to the flour and mix everything nicely.
  • In another bowl, whisk together milk, cream and oil. Add this wet mix to the dry mix and fold everything gently. There should be no lumps.
  • Do not overmix the batter or the cake will become dense.
  • Gently pour into the lined pan and smoothen the top with a spatula.
  • Sprinkle the nuts on top.
  • Bake in the preheated oven for about 25-30 minutes or until a tooth pick inserted in the center of the cake comes out clean.
  • Let the cake cool down in the cake pan for 5-10 minutes. After 10 minutes, place it on a cooling rack to cool completely.
  • Slice, serve and enjoy!!
