
Mango Lassi Chia Pudding

This make ahead Mango lassi chia pudding is a creamy and delicious fusion dish that combines the aromatic flavors of mango lassi with the nutritional benefits of chia seeds. A refreshing way to get a delectable protein packed breakfast , a snack or even a dessert.
Chia seeds are high in fiber, protein and omega 3 and they are great for your metabolism. Chia pudding is made by soaking chia seeds in a liquid ( often coconut milk , yogurt or milk ) . Chia seeds then absorb the liquid and create a creamy breakfast or pudding that can be prepared in advance. The most important thing to remember is chia seeds to liquid ratio. The perfect ratio is 3 tablespoon of chia seeds to 250 ml of liquid.

Ingredients :
Mangoes : Use sweet and juicy mangoes for the pudding. You can also use frozen chunks or canned pulp for it. I recommend Indian Kesar mango pulp or Alphonso mango pulp.
Yogurt : Fresh and plain yogurt will work best. It should not be sour. Use dairy free coconut yogurt to make it vegan. Use greek yogurt to make it creamier.
Chia seeds : Chia seed will give the lassi pudding like consistency. Make sure to properly coat chia seeds into lassi before refrigerating.
Cardamom powder : It imparts a lot of flavor and gives authentic mango lassi taste to the pudding.
Sugar : I have used sugar in the recipe but you can use your choice of sweetener like maple syrup, honey or agave.
Optional Add ins :
Coconut: You can top the pudding with some shredded coconut or roasted coconut shavings.
Other fruits : You can use your choice of fruits like blueberries, strawberries, papaya to top the mango chia pudding.
Granola : I love the crunchy granola with the creaminess of mango lassi chia pudding. You can top the chia pudding with your choice of granola.


Mango Lassi Chia Pudding
Ingredients
- 1 cup mango pulp ( or 1½ cup cubed mangoes)
- ¾ cup thick plain yogurt or greek yogurt
- ¼ cup milk
- 1 tbsp sugar ( adjust according to the sweetness required )
- 3 tbsp chia seeds
- ¼ tsp cardamom powder
Instructions
- Blend mango, yogurt , milk, sugar and cardamom in a blender until nice and smooth. At this point you can taste the sweetness and adjust according to your taste.
- Transfer the puree to a bowl and add chia seeds . Mix well.
- Cover and refrigerate for 3-4 hours or overnight.
- Once it is set, transfer into serving bowls .
- Top with your choice of nuts and chopped mango pieces. You can layer some mango puree in between if you want.
- You can also top it with some crunchy granola and any sweet fruits like blueberries, banana or strawberries.
- Serve and enjoy.
