Mango Lassi Chia Pudding
Mango lassi chia pudding combines mangoes, yogurt , sugar and chia seeds to make a delightful, high protein breakfast . A make ahead and no cook recipe.

- 1 cup mango pulp ( or 1½ cup cubed mangoes)
- ¾ cup thick plain yogurt or greek yogurt
- ¼ cup milk
- 1 tbsp sugar ( adjust according to the sweetness required )
- 3 tbsp chia seeds
- ¼ tsp cardamom powder
Blend mango, yogurt , milk, sugar and cardamom in a blender until nice and smooth. At this point you can taste the sweetness and adjust according to your taste.
Transfer the puree to a bowl and add chia seeds . Mix well.
Cover and refrigerate for 3-4 hours or overnight.
Once it is set, transfer into serving bowls .
Top with your choice of nuts and chopped mango pieces. You can layer some mango puree in between if you want.
You can also top it with some crunchy granola and any sweet fruits like blueberries, banana or strawberries.
Serve and enjoy.
