Mexican Vegetarian Tacos
A taco is a traditional Mexican dish in which crunchy or soft corn tortillas are filled with various type of fillings! Traditionally meat is used, but these vegetarian tacos will not make you miss meat at all! They are really easy to make, perfect for quick midweek meals and will satisfy the pickiest of eaters.
For the vegetarian tacos, I have used store bought taco shells, you can use tortillas , wraps or whole wheat chapatis. These crunchy taco shells are then filled with refried beans , pepper and paneer filling and topped with tangy salsa, guacamole ,lettuce and grated cheese. Simple and classic, these tacos are really hard to beat.

Ingredients:
- Tacos: 8-10
- Green Pepper: 1 medium sized , sliced thinly
- Red Pepper: 1, sliced thinly
- Onion: 1,medium sized, thinly sliced
- Paneer: 250 gms, sliced
- Olive oil: 2 tbsp
- Garlic: 3 cloves, minced
- Sweet Corn : 1/2 cup ( I used frozen sweet corn)
- Taco Seasoning: 1 tbsp ( or more if you want more spicy)
- Salt: according to taste
- Salsa: 1 cup ( I used store bought jars)
- Refried beans : 1 cup ( available in cans in supermarkets )
- Pickled Jalapeno slices : 1/2 cup , chopped
- Mexican/ Cheddar Cheese : grated , 1 cup
- Fresh green coriander, chopped : 1/2 cup
- Lettuce: shredded, 1/2 cup
Method:
- Heat olive oil in a non stick pan. Add garlic and fry till it starts to get just golden from the edges.
- Add onions and peppers and fry on high heat till they are cooked but still a bit crunchy.
- Add corn and paneer and mix well. Reduce heat to medium.
- After 5 minutes, add taco seasoning and salt and mix nicely.
- Add chopped coriander.
- Heat Tacos according to the instructions given on package.
- To Assemble:
- Heat the refried beans for 2-3 minutes in a microwave or stove top.
- In a taco, put a layer of refried beans first, then add a layer of onion pepper mix.
- Top with salsa, a generous amount of cheese, chopped jalapenos, coriander and shredded lettuce.
- You can use avocado and guacamole as well!
