Tandoori Tofu Sandwich

This high protein tofu sandwich is made with sliced tofu marinated in aromatic spices and cooked until perfectly brown and crispy. It is easy to make, flavorful and very satisfying.

Tofu is a highly nutritious plant based protein source with all the nine amino acids and packed with iron, calcium and magnesium.

There are a few steps in making this sandwich , but it is worth the extra steps . To save time , you can marinate tofu the night before and store in a covered container in the fridge until ready to cook.

Ingredients :

Tofu: Extra firm tofu is required in this sandwich. Softer ones will be too delicate.

Spices :  To give the spicy , smoky flavor to Tofu. You can adjust the cayenne pepper according to your taste. Each spice adds a little depth of flavor to the sandwich.

Nutritional yeast : It gives the cheesy flavor to the sandwich. It is easily available in supermarkets or heath shops

Mayonnaise:  You can use vegan mayonnaise for the plant based version.

Avocado :  For the creamy , rich taste.

Pickles : For the sweet tangy taste. You can skip the jalapenos if you don’t like it spicy.

Bread : I used Sourdough bread for the sandwich.

 

Tandoori Tofu Sandwich

A spicy smoky sandwich loaded with tandoori tofu, creamy avocado, crisp lettuce , pickles and your choice of condiments. Delicious, satisfying and high in protein.

Ingredients
  

For Tofu Marinade

  • 450 gms Tofu extra firm, cut into 1 inch thickness slabs
  • ½ tsp cayenne pepper ( or ½ tsp red chilli powder)
  • ½ tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1 tbsp tandoori masala ( store bought)
  • 3 tbsp nutritional yeast
  • 1 tbsp olive oil
  • salt to taste

Toppings

  • 6 Slices bread of choice ( I used sourdough bread)
  • avocado mashed to spread
  • 2 tomatoes thinly sliced
  • ½ cup pickled sliced cucumber and jalapenos
  • few of your choice of leafy greens like lettuce or rocket
  • 3-4 tbsp mayonnaise or vegan mayonnaise
  • 1-2 tsp Sriracha or more if you like it spicy
  • 1 tsp lime juice

Instructions
 

  • First to marinate tofu, mix together the marinade ingredients , then carefully dip the tofu in the blend , covering both sides.
  • Preheat the oven at 200 degrees Celsius. Line a large baking tray with parchment paper and keep aside.
  • Once the tofu is marinated, bake in oven for about 20 minutes or until brown on edges. Flip it and cook for 5 more minutes.
  • Keep it aside.

The sandwich sauce:

  • Mix together Mayonnaise and sriracha. Keep aside
  • Add salt , pepper and lime juice to the mashed avocado.

Build Sandwich

  • On one side of the bread, spread mashed avocado and on the other side spread mayo and sriracha mix. On the mashed avocado layer up your greens, tomato and pickles. Top with other slice of the bread.
  • Toast in a sandwich maker or on a heavy pan.
  • Enjoy!
