Pasta is an excellent source of complex carbohydrates, which provide a slow release of energy. It is a part of well balanced diet and very low in sodium and cholesterol free.
‘Pomodoro’ means tomato in Italian, and this simple yet delicious pasta is inviting, bursting with flavours , and can be put together in few minutes.

Ingredients:
- 2 tablespoon olive oil + extra for drizzling
- 3 garlic cloves finely chopped
- 1 can peeled and chopped tomatoes
- 1/2 teaspoon crushed black pepper
- 1 teaspoon Italian seasoning
- 2 tablespoon fresh cream
- 1 tablespoon freshly grated Parmesan cheese + extra for serving
- 1/4 cup fresh basil leaves
- salt to taste
- 1/4 teaspoon crushed red pepper flakes ( optional)
- 300 grams spaghetti
Method:
- Cook spaghetti, according to package instructions , in a large pot of boiling salted water,until cooked. Stir occasionally. Drain and reserve 1/2 cup of pasta water.
- Heat oil in a large skillet on medium heat.
- Add garlic and cook for 2-3 minutes, stirring occasionally, till they are little golden at the edges.
- Add tomatoes and salt.
- Cook on medium heat for 10-12 minutes, until tomatoes thicken slightly.
- Add black pepper and Italian seasoning.
- Switch off the flame and let it cool a little.
- Blend the sauce to a smooth puree with the help of a hand blender.
- Put it back on low heat.( be careful as it can splutter)
- Add cream and Parmesan.
- Check and adjust the seasonings.
- Add the reserved pasta water if the sauce is too thick.
- Stir the spaghetti into the sauce, until well coated.
- Serve with basil leaves, freshly grated Parmesan, freshly crushed black pepper ,crushed red pepper flakes and a drizzle of olive oil.
- Serve hot and enjoy!
