Palak Paneer Bhurji
Palak Paneer Bhurji is a healthy and delicious twist to the well known paneer bhurji! It is a mildly spiced spinach recipe in which crumbled paneer is sauteed with spinach and some spices! Very easy and quick to cook , palak paneer bhurji goes well with rotis or parathas, or give it an interesting twist by making sandwiches with it or roll it into a wrap and you have delicious sandwiches/wraps ready in no time!!
Spinach is an extremely nutrient-rich vegetable. It is full of high amounts of carotenoids, vitamin C, vitamin K, folic acid, iron, and calcium.

Ingredients:
- Onion: 2 medium sized, chopped finely
- Spinach: 300 gms, washed and chopped finely
- Tomatoes : 2 medium sized, chopped
- Green chillies: 2, chopped (optional)
- Garlic: 2-3 cloves, grated
- Ginger: 1 inch. grated
- Paneer: 250 gms, crumbled
- Oil: 2-3 tbsps
- Cumin seeds: 1/2 tsp
- Asfoetida/hing: a pinch
- Salt: according to tase
- Turmeric Powder: 1/2 tsp
- Coriander powder: 1 .5 tsp
- Chilli Powder: 1/4 tsp
- Garam masala: 1/2 tsp
- Lemon juice: 1/2 tsp
Method:
- Heat 2-3 tbsp of oil in a non stick/ thick bottom pan. Once the oil is hot, add cumin seeds and hing and let the cumin seeds crackle. You can also use butter or ghee instead of oil.
- Add chopped onion and saute on medium flame.
- Once the onion is light brown, add ginger, garlic and green chillies and mix nicely.
- Saute on medium flame for 1-2 minutes .
- Next, add chopped tomatoes , Add some salt and keep stirring.
- Once the tomatoes turn soft and mushy, add turmeric powder , coriander powder and red chilli powder. Mix everything nicely.
- Add chopped spinach leaves when the oil starts to separate from onion tomato mix. Mix it well.
- Cover the pan and cook on low to medium flame . Keep checking and mixing in between .
- When the spinach starts cooking, you will see some water in the pan. Cook on low to medium flame till the water evaporates.
- Now, add the crumbled paneer and mix everything nicely. Add more salt if necessary!
- Cook for 3-4 minutes on medium to low flame till the paneer is cooked. Don’t cook for too long or paneer will get hard.
- Add garam masala and lemon juice.
- Serve garnished with coriander leaves.
