Mexican Molletes (Mexican Bean and Cheese Sandwiches)
Mexican Molletes (pronounced moh-yeh-tehs) are incredibly delicious open faced sandwiches , mainly consisting of crusty bread topped with refried beans and grated cheese, then baked until the cheese is melted perfectly. Then they get topped with fresh simple salsa such as pico de gallo and they are ready to eat as breakfast, lunch or a nutritious tasty snack.
They are super simple to make and can be made in a jiffy, yet so impressive in appearance.
Here is what you will need :
- Bread : Traditionally Mexican bread ‘Bolilo’ is used for making molletes , but its difficult to find here . I have used sourdough bread and it works perfectly. You can use any thick bread like French Baguettes.
- Beans: Refried beans are best for this. I have used canned refried beans . They can easily be re heated on a skillet, adding a little water if they become too dry. Refried beans aren’t actually fried twice – just once.
- Cheese : In Mexico Oaxaca cheese is used , but any other good melting cheese can be used like Cheddar, Monterey jack or Mozzarella .
- Salsa: The typical salsa used is fresh salsa made with onions, tomatoes, fresh coriander and Jalapeno with lime juice. You can use any other Salsa you like. I like to add a little bit of store bought salsa too for the extra tanginess.
Mexican Molletes ( Molletes Mexicanos )
Easy to make and super tasty, these molletes are Mexico's twist on Beans on toast
Ingredients
- 4 Slices Sourdough bread white /brown , any will work
- 1 Cup Mozzarella or Cheddar Cheese grated
- 3 Tbsp Butter at room temperature
- 1 Can Refried beans, heated I used store bought
- 1 Cup Salsa Store bought, optional
For Pico De Gallo
- 2 Ripe Tomatoes diced
- 1 Onion chopped finely
- 1 Jalapeno chopped
- ¼ Cup Pickles Jalapenos chopped ( optional )
- 1 Lime
- 15-20 Sprigs Coriander chopped
- Salt as per taste
Instructions
For Salsa Fresca (Pico De Gallo )
- In a bowl, mix together chopped onion, tomatoes , chillies, coriander , jalapenos, salt and lime juice. Toss to combine and keep aside.
For Mollettes
- First, take the refried beans out and heat the beans in a pan or in a microwave for 2 minutes. You can add a little water if they get too dry or too thick.
- Preheat the oven at 180 degree Centigrade.
- Next, spread butter on sourdough bread slices. Place the buttered bread slices on a lined baking tray in the preheated oven for 2-3 minutes to crisp them up. You can toast the bread on a hot skillet/pan too until it is nice and toasted.
- Top the bread with refried beans ( around 3 tbsp per slice ) and spread them over .
- Top with some grated cheese and put the slices back in the oven and cook for 6-7 minutes until the cheese is melted.
- When ready, remove molletes from the oven and top with fresh Salsa Fresca.
- Scatter chopped coriander and some store bought salsa on top and serve warm.
