Palak Paneer Bhurji is a healthy and delicious twist to the well known paneer bhurji! It is a mildly spiced spinach recipe in which crumbled paneer is sauteed with spinach and some spices! Very easy and quick to cook , palak paneer bhurji goes well with rotis or parathas, or give it an interesting twist by making sandwiches with it or roll it into a wrap and you have delicious sandwiches/wraps ready in no time!!

Paneer Spinach Stir-Fry
Ingredients
- – 2 medium onions finely chopped
- – 300g spinach washed and finely chopped
- – 2 medium tomatoes chopped
- – 2 green chillies chopped (optional)
- – 2-3 cloves garlic grated
- – 1-inch ginger grated
- – 250g paneer crumbled
- – 2-3 tbsp oil or butter/ghee
- – 1/2 tsp cumin seeds
- – A pinch of asafetida hing
- – Salt to taste
- – 1/2 tsp turmeric powder
- – 1.5 tsp coriander powder
- – 1/4 tsp red chilli powder
- – 1/2 tsp garam masala
- – 1/2 tsp lemon juice
Instructions
- Heat 2-3 tbsp oil in a thick-bottomed pan over medium heat. Add cumin seeds and asafetida, letting the cumin seeds crackle.
- Add chopped onions and sauté until light brown.
- Add ginger, garlic, and green chillies. Sauté for 1-2 minutes.
- Add chopped tomatoes and some salt. Stir occasionally until tomatoes turn soft and mushy.
- Mix in turmeric powder, coriander powder, and red chilli powder. Stir well.
- When the oil starts separating, add the chopped spinach. Mix well.
- Cover the pan and cook on low to medium heat, stirring occasionally, until the water from the spinach evaporates.
- Add crumbled paneer and mix well. Adjust salt if needed.
- Cook for 3-4 minutes on medium-low heat. Avoid overcooking to keep the paneer soft.
- Add garam masala and lemon juice. Mix well.
- Garnish with coriander leaves and serve hot.

– For extra richness, substitute oil with ghee or butter.
