Fruit Custard is a light and refreshing summer dessert made with few ingredients like milk, sugar, custard powder and your choice of fruits. It is very quick to make and can be made ahead of time. Fruit custard is perfect for big gatherings of family and friends when you need to make a simple dessert which is quick and easy.
Ingredients required :
Milk : For best results , use full fat milk .
Custard Powder: Make sure the custard powder is egg free and gelatin free . Look out for the one that is suitable for vegetarians. In UK I used Birds Custard powder.
Sugar: I have used white granulated sugar.
Fruits : You can use a variety of fruits like, mango, banana, apples, chikoo (sapota), pomegranate , seedless grapes, strawberries and blue berries. Avoid citrus fruits, kiwi and melons. You can also use your favorite dry fruits and nuts to the custard.
Tips and Tricks :
- It is important to chill the custard before adding fruits. I chill the fruits as well separately before adding it to custard. Once the fruits are added to the custard, moisture is released and custard will thin out so it is preferable to add fruits when you are ready to serve the custard.
- Don’t worry if the custard is too thick , it will thin out once the fruits are added.

Fruit Custard
Equipment
- 1 Heavy bottom pan
- 1 large mixing bowl
Ingredients
- 3 cups whole milk
- 3 tbsp custard powder
- ¼ cup warm milk (milk should be at room temperature or just warm, not hot )
- 5 tbsp sugar
- 1.5-2 cups chopped mix fruits -apples, bananas, grapes, strawberries, pomegranate , mango, blueberries, chikoo etc.
Instructions
- Wash the fruits and refrigerate them.
- Combine 3 tablespoons of custard with ¼ cup of milk ( warm or at room temperature) . With a whisk stir it nicely to make a lump free slurry. Keep it aside.
- Heat 3 cups of milk in a wide heavy bottom pan . Bring the milk to gentle heat. Add sugar and stir well so the sugar can dissolve.
- Once the milk comes to boil,lower the heat . Stir the custard slurry once, and then slowly add the slurry to the milk while continuously stirring it . This will prevent any lump formation.
- You can taste test at this stage and add more sugar if required.
- Cook for few more minutes until the custard coats the back of the spoon.The consistency should be creamy and runny as it will continue to thicken when it cools down.
- Switch off the flame when it reaches the desired consistency. Whisk it well to make it smooth. Allow the custard to cool at room temperature. Keep stirring it in between as it cools. You don't want any layer formation on it as it will result in lumps.
- Once the custard cools down let it chill in fridge for few hours.
- In the meantime chop the fruits finely. Use seasonal fruits . Avoid citrus fruits and melon. I used apples, mango, banana, strawberry, pomegranate and blueberries.
- Once you are ready to serve add the chopped fruits to the custard. Garnish with pomegranate seeds and chopped fruits. Serve chilled
