Wash the fruits and refrigerate them.
Combine 3 tablespoons of custard with ¼ cup of milk ( warm or at room temperature) . With a whisk stir it nicely to make a lump free slurry. Keep it aside.
Heat 3 cups of milk in a wide heavy bottom pan . Bring the milk to gentle heat. Add sugar and stir well so the sugar can dissolve.
Once the milk comes to boil,lower the heat . Stir the custard slurry once, and then slowly add the slurry to the milk while continuously stirring it . This will prevent any lump formation.
You can taste test at this stage and add more sugar if required.
Cook for few more minutes until the custard coats the back of the spoon.The consistency should be creamy and runny as it will continue to thicken when it cools down.
Switch off the flame when it reaches the desired consistency. Whisk it well to make it smooth. Allow the custard to cool at room temperature. Keep stirring it in between as it cools. You don't want any layer formation on it as it will result in lumps.
Once the custard cools down let it chill in fridge for few hours.
In the meantime chop the fruits finely. Use seasonal fruits . Avoid citrus fruits and melon. I used apples, mango, banana, strawberry, pomegranate and blueberries.
Once you are ready to serve add the chopped fruits to the custard. Garnish with pomegranate seeds and chopped fruits. Serve chilled
