Eggless Banana Bread with Chocolate Chips
If you have over ripe bananas which no one wants to eat, try this easy and quick eggless banana bread with chocolate chips ! It is soft , moist and full of flavor. A perfect treat for breakfast, snack or dessert!
This bread is made with simple and very few ingredients . It has perfectly moist and spongy texture. You can add walnuts or any other nut of your choice to the batter. But, do not overmix the batter. You can leave the banana chunky or puree it in a blender, its your choice! I like it smooth, so I pureed bananas in a blender.
Course: Dessert/ Breakfast Servings : 1 Loaf
Ingredients:
- Bananas : 1 cup, pureed or mashed ( about 3 medium sized , very ripe bananas)
- All Purpose flour/ Maida : 3/4 cup
- Butter ( use oil for vegan version) : 1/4 cup
- Sugar: 1/2 cup (powdered or use caster sugar)
- Vanilla essence: 1 tsp
- Baking soda: 1/2 tsp
- Baking Powder: 1/2 tsp
- Chocolate Chips: 2 tbsp
Method:
- Preheat oven to 180 degree centigrade. Grease a loaf pan and keep it aside.
- Now, mash the bananas with a fork or puree them in a blender. The pureed bananas should measure upto 1 cup.
- Put mashed bananas in a bowl. Add sugar and butter/oil. Mix them nicely till the sugar melts. If the sugar is powdered it will be easily mixed with bananas.
- In a separate bowl, sieve together baking soda, baking powder and all purpose flour. Add chocolate chips to the flour mixture and mix it nicely so that the chocolate chips get coated with the flour. ( This step prevents chocolate chips from sinking to the bottom of the cake when you bake it )
- Now, add the flour mixture to banana mixture and mix nicely. There should not be any lumps.
- Pour this mix to the prepared bread loaf pan. Sprinkle some chocolate chips on the top.
- Bake it for 30-35 minutes at 180 degree centigrade or till the tooth pick inserted at the centre of the cake comes out clean.
- Allow cooling before removing from pan.
