Egg Mayonnaise Sandwich with Avocado

IMG_20190204_220558_510Turn up the volume of classic egg mayonnaise sandwich with this super easy but  different recipe which is perfect for lunch boxes and picnics or can be served as a appetiser in parties. Creamy and comforting,soft and rich, but substantial enough to satisfy the hunger pangs.It is a simple sandwich , nevertheless an absolute pleasure to  eat!

Eggs are a very good source of inexpensive, high quality protein. More than half the protein of an egg is found in the egg white.  Eggs are rich sources of selenium, vitamin D, B6, B12 and minerals such as zinc, iron and copper.

Additionally, avocados are loaded with nutrients such as Vitamin C, vitamin K, vitamin B and E. They contain quite a bit of potassium and dietary fibre.

Lets see how to make this super healthy and delicious sandwich!

Ingredients:

  • Eggs : 2
  • Bread Slices (white or multigrain): 4
  • Mayonnaise:  1 tbsp or more to reach a creamy consistency
  • Mustard sauce: 1 tsp (optional)
  • Salt and pepper : to taste
  • Avocado: 1 (peeled and sliced)
  • Branston pickle with small chunks (optional) : 2 tbsp
  • Salad leaves (of your choice): a  handful

Method:

  • First of all, boil the eggs. Once cooled, peel and chop into small pieces.
  • In a large bowl, mix together finely chopped eggs, mayonnaise, salt and pepper and mustard sauce.
  • Mix everything nicely.
  • Spread a layer of branston pickle on 1 side of bread.
  • Top with a thick layer of egg mixture.
  • Put a layer of thinly sliced avocado and some salad leaves on it.
  • Close the sandwich with another slice of bread.
  • Make another sandwich in exactly the same way.
  • Cut in desired shapes like triangles or squares.
  • Enjoy!!

** You can omit avocados if you prefer, or you can use white bread, these sandwiches can be easily customised and they still taste great!!
