Bharwan Mirch (Chillies Stuffed with potato mix)
Bharwa Mirch or Chillies stuffed with potato masala is a very flavorful and easy side dish, cooked using a delicious filling of stir fried potatoes. They look really beautiful and appetizing and goes very well with any kind of dal and curry.

So after the amazing health benefits, lets look at the recipe of stuffed green chillies:
Ingredients:
- Long green chilies : 10-12 (the light green ones also known as Turkish green chillies are generally less spicy)
- Oil : 2 tablespoon
- Chat Masala: 1 tsp
- 1/2 Lime
For potato mix:
- 3-4 medium sized potatoes, boiled and mashed roughly
- 1 tbsp oil
- a pinch asfoetida powder
- Salt: to taste
- 1/2 tsp cumin seeds
- 1/2 tsp crushed coriander seeds
- 1/2 tsp turmeric powder
- 1.5 tsp coriander powder
- 1/2 tsp chilli powder
- 1/2 tsp mango powder (amchoor)
- 1/4 tsp garam masala
- chopped green coriander
Method:
For potato mix:
- Heat oil in a thick pan or non stick kadhai.
- When its hot add cumin seeds, coriander seeds and asfoetida powder.
- Keep the flame to medium.
- Add turmeric powder ,chilli powder and coriander powder to oil when seeds start spluttering.
- After 10 seconds add boiled potato and mix nicely with spices
- Add salt, mango powder, and garam masala to the potatoes and again mix it.
- When it is mixed nicely ,taste and adjust the seasonings.
- Switch off the flame and add chopped green coriander to potato mix.
- Keep it aside and let it cool down.
- For the chillies:
- Slit the green chillies through the middle, keeping the base intact and remove the seeds.
- Stuff the green chillies with potato mix
- Heat 1 tbsp of oil in a wide non stick pan/kadhai and carefully put the chillies in oil one by one.
- Gently saute for 1-2 minutes.
- Cover the pan and cook on low-medium heat for 8-10 minutes till the chillies look soft and cooked.
- Squeeze some lemon juice and sprinkle chaat masala and garnish with green coriander.
- Serve hot with dal, roti or rice.
