Chocolate Hedgehog slice ( No bake recipe )

Hedgehog slice is a classic Australian no bake treat . It is made with condensed milk, crushed biscuits, coconut, chocolate and mix ins of your choice, topped with a layer of melted chocolate. It is fudgy, crunchy, chocolatey, easy to make and there is no need of an oven.

Traditionally Hedgehog slices contain nuts , however I did not use nuts in my recipe . I used rice krispies for the crunch. Cornflakes can also be used or you can use toasted nuts like walnuts, peanuts or almonds if you prefer.
The slices keep really well in a freezer so they can be made ahead when you have time and serve when you are ready.
Ingredients required :

- Condensed milk : It helps to bind the ingredients and adds sweetness.
- Butter : I used unsalted butter. Salted works too.
- Chocolate : A combination of dark and milk chocolate creates the perfect balance of rich chocolatey flavor and sweetness of milk chocolate.
- Cocoa powder : To enhance the chocolate flavor .
- Coconut : Unsweetened desiccated coconut for the texture and flavor .
- Digestive Biscuits : Digestive biscuits, Malted milk, Rich tea biscuits or Marie biscuits are good options.
- Mix ins : Traditionally nuts are used. I have used rice crispies here, but with cereal it doesn’t stay crispy for long. You can use cornflakes for the satisfying crunch. Fudge chunks, cranberries, raisins or dry fruits can also be used.
- Chocolate topping : A combination of dark and milk chocolate is used to create a smooth glossy topping. You can use refined coconut oil so the chocolate doesn’t crack while cutting.


No Bake Chocolate Hedgehog Slice
Hedge hog slice is Australia's most popular no bake chocolate slice. Full of crushed biscuits, coconut, chocolate and your choice of mix ins , it is rich, crunchy and easy to make .
Equipment
- 20 cm square baking tin
- Baking paper or parchment paper
Ingredients
- 397 gms Sweetened condensed milk
- 100 gms Unsalted butter
- 250 gms Digestive biscuits crushed
- 100 gms Dark chocolate broken into chunks
- 50 gms Milk chocolate broken into chunks
- 2 tbsp cocoa powder unsweetened
- 70 gms Unsweetened desiccated coconut ( approx 3/4 cup)
Optional mix ins :
- 45 gms crushed cornflakes (approx 3/4 cup)
- ⅔ cup roasted nuts like almonds (optional )
For the topping :
- 100 gms Dark chocolate chopped roughly
- 100 gms Milk chocolate chopped roughly
- 1 tsp refined coconut oil (optional)
Instructions
- Line a square 8 X 8 inch baking tin with baking paper, leaving an over hang on two sides. This makes it easy to lift the slice once it is set.
- Lightly crush the biscuits in a range of sizes. Some large and small chunks are OK.
- Place butter, condensed milk , dark and milk chocolate in a large microwaveable bowl and melt in 30 seconds bursts, stirring in between.
- Add the crushed biscuits, desiccated coconut , cocoa powder and cornflakes ( or any other mix-ins ) to the melted chocolate mixture and mix well until everything is coated.
- Spoon the mixture into the prepared tin . Flatten and smoothen with a spatula . Refrigerate while you prepare the topping.
To make the topping :
- Chop milk and dark chocolate roughly into small chunks .
- Melt the chopped chocolate and coconut oil in a heat proof bowl in a microwave in 20 seconds bursts until melted.
- Mix well , pour over the biscuit base and spread evenly. Gently tap the tin a few times to help get out any air bubbles.
- Place in the fridge for 3 hours to set.
- Remove from the fridge 30 minutes before you want to slice to soften the chocolate topping slightly.
- Use the overhanging baking paper to remove the slice from the tin . Using a sharp knife , cut into squares.
- Store in fridge in an air tight container. Enjoy!
