Lemon Quinoa is a South Indian style lemon rice made with Quinoa and flavored with mustard seeds , curry leaves, ginger , green chilli and lemon. This recipe is similar to lemon rice except rice is replaced with quinoa which makes it a lot more nutritious than lemon rice.
Quinoa is a gluten free seed and it contains all the nine essential amino acids that our body needs. It is one of the healthiest foods and considered a super food for all its health benefits.
It tastes good at room temperature too so its a great dish to pack for lunch boxes. Its very quick to make and can be ready in about 20 mins and it will stay good in refrigerator for 2-3 days .
You will need :
- Quinoa : There are two types of Quinoa available in the market, red and white. I used white as its easily available. Wash 2-3 times before using. Cook until soft. Don’t overcook it or it will become mushy.
- Oil: You can use any oil . I used sunflower oil.
- Nuts/Lentils : Cashews or Peanuts can be used for an extra crunch . I have used moong dal and urad dal.
- Spices and Seasonings: I have used mustard seeds , curry leaves , hing , ginger and green chilli.
- Veggies: I have used Onions. You can use carrots , green peas etc.
- Lemon juice and fresh Coriander
