Shakshuka

Ingredients
  

  • onion - 1
  • garlic cloves - 2
  • chopped can - 1
  • 1/2 chopped tomato/tomato sauce
  • green peppers - 1
  • red pepper - 1
  • coriander powder - 1 tsp
  • cumin powder - 1/2 tsp
  • smoked paprika - 1 tsp
  • curry powder - 1 tsp
  • 1/2 cup chopped parsley
  • pinch of red pepper flakes
  • 4 eggs
  • olive oil - 3 tbsp
  • black pepper - 1/2 tsp

Instructions
 

  • heat 3 tbsp oil -> add onion & peppers & garlic
  • after 2 min add all spices + salt & pepper
  • cook for 5 mins on medium flame
  • add can of chopped tomato, cover & simmer for 10 min
  • when it thickens - make 4 wells & break eggs
  • cover & cook for 10 mins on low - medium flame for sunny eggs
  • 15-20 mins for hard eggs
