Ingredients

  • 2 large Flour Tortillas use Gluten-free if preferred
  • 4 tbsp Pizza Sauce or Marinara sauce
  • 1 cup Mozzarella cheese shredded (or Cheddar)
  • Veggies choose your favorites:
  • 1/4 cup Onions thinly sliced
  • 1/4 cup Bell peppers Capsicum, sliced
  • 2-3 Mushrooms thinly sliced
  • 1 tbsp Black olives sliced
  • Pickled Jalapeños optional, for a spicy kick
  • 1 tsp Italian Seasoning or Pizza Seasoning
  • 4-5 Fresh Basil leaves torn
  • 1 tbsp Butter or Oil for grilling

Instructions

  • Prepare the Tortilla
  • Place a large flour tortilla on a clean, flat surface. Spread about 2 tablespoons of pizza sauce evenly over the entire surface of the tortilla, leaving about half an inch at the edge.
  • Add the Fillings
  • On one half of the tortilla, sprinkle a generous layer of shredded mozzarella cheese. Layer your prepared vegetables (onions, peppers, mushrooms, and olives) over the cheese.
  • Season
  • Sprinkle the Italian seasoning and torn fresh basil leaves over the vegetables. Add another small sprinkle of cheese on top of the veggies; this acts as "glue" to keep the wrap together when folded.
  • Fold
  • Carefully fold the empty half of the tortilla over the filling to create a semi-circle (half-moon shape).
  • Grill the Pizzadilla
  • Heat a flat pan or tawa over medium-low heat and add a little butter or oil. Once hot, place the folded wrap onto the pan.
  • Cook Until Crispy
  • Press down gently with a spatula. Cook for 2-3 minutes until the bottom is golden brown and crispy. Carefully flip the wrap and cook the other side for another 2 minutes, or until the cheese is completely melted and the exterior is toasted.
  • Serve
  • Remove from the pan and let it rest for a minute so the cheese sets slightly. Use a pizza cutter or sharp knife to cut into wedges. Serve hot with the Creamy Garlic Dip or additional marinara sauce.

Notes

Crispy Tip: Keep the heat on medium-low. If the heat is too high, the tortilla will burn before the cheese inside has a chance to melt properly.
Variations: You can add protein like paneer cubes, tofu, or cooked corn to make it more filling.
Pre-cooking Veggies: If you prefer your onions and mushrooms to be very soft, sauté them in a pan for 2 minutes before adding them to the wrap.
Storage: These are best eaten fresh, but you can reheat them in a dry pan to regain the crispiness.
