Cuisine American
- 1½ cup milk ( I used full fat)
- ½ cup double cream
- 2 tbsp corn starch
- 3 tbsp cocoa powder
- 1 tbsp unsalted butter
- ½ cup dark chocolate chips ( you can use ¼ cup milk +¼ cup dark chocolate chips )
- 3½ tbsp brown sugar ( you can use granulated)
- ½ tsp pure vanilla extract
- Strawberries/ blueberries/ chocolate shavings for garnishing
In a medium sauce pan add sugar, corn starch, cocoa powder . Mix everything nicely.
Next, slowly add milk and cream to the mix , whisking to prevent lumps until combined with the dry mix.
Put the saucepan on medium heat and keep stirring. After 2 minutes , add chocolate chips and keep stirring until the chocolate has melted . The pudding will start to thicken. It will take roughly 8 minutes for it to properly thicken .
Turn off the heat when the pudding reaches custard consistency. Stir in vanilla extract and butter.
Pour in the dessert bowls and let it cool at room temperature. Once it is at room temperature , chill in fridge for at least an hour . It will get thicker in fridge.
After few hours of chilling in fridge, garnish with berries and chocolate shavings. You can serve it with whipped cream or vanilla ice cream.
Enjoy!
