Jini dosa is a popular street food from Mumbai in which dosa is cooked with spicy, sour and succulent mix of veggies . The dosa is then cut into strips and rolled and then topped with cheese.  It results in a crispy, delicious and cheesy fusion dosa bursting with flavors.

Traditionally ,first the dosa batter is spread on tawa and vendors mix and cook  the veggie mix on top of dosa itself. However at home when impatient kids are waiting and you have the whole family to serve there has to be a quicker way. So I have cooked the filling seperately, that ways you just need to spread the filling once your dosa in on tawa. Another difference is , I did not use any special batter for the recipe , just the regular idli dosa batter works fine.

Once the dosa is crispy, just take it out carefully on a chopping board or a plate and cut into strips with the help of a pizza cutter.

 

Like all other recipes , this recipe is customizable to suit your taste and dietary requirements. You can use less or more sauce for the recipe or add/skip any vegetables as per your taste.

 

Things you will need:

Dosa batter: Normal dosa batter works fine. I used the shop bought one. We get this ready made 1 kg packs of Idli/dosa batter in our local Indian grocery shop. You can use home made or shop bought. Any dosa batter which is spreadable works well for the recipe.

Oil and butter: Skip the butter for vegan version and use oil only.

Vegetable mix:  You will need onions, garlic , tomatoes, green and red ( or any other color ) peppers, spring onions

Sauces: I used Schezwan chutney and tomato ketchup

Spices: Salt and black pepper

Further ingredients: Grated Cheese , spring onion greens and fresh coriander. You can use grated paneer too.

Ingredients
  

For Veggie Mix

  • 1 Tbsp Butter
  • 2 Tbsp Oil
  • 2 Onions finely chopped
  • 2 Tomatoes finely chopped
  • 1 Green Pepper finely chopped
  • 1 Red Pepper finely chopped
  • 1 Cup Cabbage shredded or finely chopped
  • 2 Tbsp Tomato Ketchup
  • 4 Tbsp Schezwan Chutney
  • Salt according to taste
  • 1 Tsp Black pepper powder

Further Ingredients:

  • 3 Cups Dosa batter Store bought or home made
  • 1 Cup Cheese grated Cheddar/mozzaralla or processed cheese
  • ½ Cup Fresh Coriander chopped
  • 1/2 Cup Spring onion greens chopped

Instructions
 

For the filling:

  • Heat a thick pan and add 1 tbsp oil to it. Once the oil is hot add onions and cook until the onions turns translucent.
  • Next, add chopped/shredded cabbage , red pepper and green pepper and give it a good mix.
  • Cook the vegetables for 6-7 minutes on medium flame until they are slightly soft.
  • Next, add tomatoes and mix. Cook until tomatoes are slightly mushy.
  • Add salt, black pepper, schezwan chutney and tomato sauce. Mix everything nicely. Cook for few more minutes.
  • Mash lightly with a potato masher . Add chopped coriander and switch off the flame.
  • Keep the filling aside.

Preparing the dosa:

  • Heat a non stick dosa pan or well seasoned cast iron pan. Put few drops of oil on pan and spread the oil all over on pan with the help of a paper napkin. When the pan is hot reduce the heat to medium low.
  • Take a ladle full of dosa batter and spread it around evenly in a neat round circle.
  • After 10 seconds, spread 1 tsp of butter evenly over it with the help of a spatula. Spread 1/2 tsp of oil around the edges.
  • Now take 2-3 tbsp of prepared filling , spread it evenly on dosa and let it cook for 10-15 seconds.
  • Sprinkle 1 tbsp of cheese on dosa . You can add more if you like or you can add some grated paneer too.
  • Sprinkle some chopped coriander and spring onion greens and once the dosa is crisp, take the dosa out on a chopping board and cut in 3-4 vertical strips using a pizza cutter.
  • Roll each strip tightly into a cylinder and place on a serving plate. Sprinkle more cheese and chopped fresh coriander on it.
  • Repeat the steps to make dosa for making more dosas .
  • Serve immediately with your favorite chutney. We like it with coconut chutney and tomato chutney.
