Garlicky Mushrooms and Spinach on Toast
Garlicky Mushrooms and Spinach on toast is a flavorful meal , made with few ingredients, can be made in a jiffy and has a umami deliciousness. It is so satisfying and delicious ,that you can have it for breakfast , brunch, fast lunch or easy dinner with a hearty salad.
Mushrooms and spinach cook very fast and they can be sauteed few hours ahead or may be a day before, just warm them when you are ready to serve the dish. I used closed cup mushrooms but you can experiment with different varieties of mushrooms . If you like you can melt some cheese on it or top it with a fried egg, or serve it as it is. It will taste good on its own too .
Thick crusty slices of bread will be good for this toast. I always prefer sourdough bread. Also Ciabatta , thick whole wheat bread or country bread can be used.
Garlicky Mushrooms and Spinach on Toast
Ingredients
- 2 Tbsp Olive oil
- 1 Tbsp Butter
- 300 grams Mushrooms ( About 2 cups mushrooms) Sliced
- 3-4 Garlic Cloves minced
- 2-3 Tbsp Parsley Chopped finely
- 4 Slices Thick crusty bread Like Sourdough or Ciabatta
- Salt and Black pepper As per Taste
- 2 tsp Chilli Flakes
- 1 Tbsp Italian Seasoning
- 4 Eggs ( Optional )
- ¼ Cup Grated Cheddar Cheese ( Optional )
- 1 Cup Rocket leaves
Instructions
- Heat olive oil and butter in a large non stick fry pan . Once oil is hot, add mushrooms and fry on high heat until they begin to brown and all liquid evaporates.
- Add garlic and cook for 2-3 minutes.
- Add half the spinach and fold through. Add the remaining spinach leaves and cook for 4-5 minutes until the spinach is wilted and liquid is evaporated.
- Add salt, pepper and Italian seasoning.
- Toast your bread and spread some rocket leaves .
- Spoon the mushroom mix on warm toasted breads.
- If you like , top the mushroom mix with some grated Cheddar and keep in preheated oven for few minutes until the cheese is melted or top with a fried egg.
- Sprinkle parsley leaves , chilli flakes , salt and black pepper. You can drizzle some chilli oil or Sriracha if you have some on hand.
