Dhaba Style Egg Curry
Dhaba Style egg curry is a lip smacking, flavorful and a finger licking recipe which is very simple to prepare and ready in under 25 minutes. In this egg curry, boiled eggs are cooked in onion tomato based gravy and it goes very well with rotis, naan or rice.

Course : Main Serves 2
Ingredients:
- Eggs : 5, Boiled and peeled
- Oil: 2tbsp
- Cumin seeds: 1 tsp
- Bay leaf: 1
- Cloves : 3-4
- Black Pepper: 3-4
- Cinnamon Stick: 1 inch piece
- Green Cardamom: 2
- Onions: 3 medium sized chopped very finely
- Ginger Garlic paste: 1 tbsp
- Green chillies: 2 chopped
- Tomatoes pureed : 1 cup (approx 4 tomatoes )
- Tomato puree: 1/3 cup ( store bought ,for the lovely red color of gravy)
- Salt : according to taste
- Turmeric powder: 1/2 tsp
- Coriander powder: 1 tsp
- Dry Mango Powder (amchoor): 1/2 tsp
- Kashmiri red chilli powder: 1/2 tsp
- Kasoori Methi: 1 tbsp
- Garam masala: 1/2 tsp
- Chopped fresh Coriander: 2tbsp
Method:
- Heat oil in a pan or kadhai, on medium heat and add cumin seeds when the oil is hot.
- Add cloves, cinnamon, black pepper , bay leaf and green cardamom. Let them puff up.
- Add chopped onions and fry them on medium heat.
- When the onions start to get golden brown from the edges , add ginger garlic paste and green chilli.
- Keep frying on medium heat. Its very important to fry onions properly to get a nice color of gravy. They should get golden brown but dont burn them and raw smell of garlic should be gone.
- Add pureed tomatoes and salt.
- Let the tomatoes cook for 3-4 minutes and then add tomato puree, turmeric powder, coriander powder, amchoor powder and red chilli powder.
- In the mean time slice 4 eggs in half and chop 1 egg in small pieces.
- When the masala leaves oil, add halved and chopped eggs to the masala.
- Fry the eggs in masala for 2 minutes on low flame.
- Add 2-3 cups of water,let it boil on medium flame and cook till gravy thickens a bit.
- Add kasoori methi and garam masala and cook for 1 more minute. Check and adjust salt.
- Take off the flame and garnish with chopped coriander.
- Enjoy!!
