Schezuan Fried Rice
Schezuan rice is a lip smacking, Indo Chinese fried rice preparation which has unique spicy and garlic flavors brought about by addition of schezuan sauce.
This rice is very quick to make and the addition of so many vegetables make it healthy and colorful. A complete food in itself, it is fantastic for lunchboxes and picnics, however it tastes super delicious when served with Indo chinese curries like chilli paneer or manchurian.
Points to remember:
- All the Indo Chinese cooking needs to be done at high heat so constant stirring and tossing is required. It ensures the vegetables are crunchy and fresh.
- Keep all your ingredients ready before you start so you don’t have to scramble in the middle of the preparation. All cutting, chopping, seasoning and sauces should be ready.
- Chop the vegetables finely so they will cook faster.
Follow the recipe below to make this spicy and tangy rice at home.
Ingredients:
- Sesame oil: 3 tbsp (Use any vegetable oil if you don’t have it)
- Spring onion whites: 1/4 cup chopped
- Spring onion greens : 1/4 cup chopped
- Celery: 1/3 cup chopped (skip if you cant find it, but it gives a really authentic flavour)
- 2 cups finely chopped vegetables ( I used 1 medium sized carrot, 1 green pepper, 1 red pepper, 10-12 green beans)
- 2-3 garlic cloves, finely chopped
- 1 inch ginger piece :chopped finely
- 2 tbsp Soy Sauce
- 1.5 tbsp Schezuan sauce – use more if you like spicy ( I used Ching’s )
- 1 tsp rice vinegar
- 4 cups cooked rice ( a day old works best)
- Salt: as per taste
- Black pepper crushed: 1/2 tsp
Method:
- Heat a wok or a broad frying pan and add oil to it.
- When the oil is hot, add ginger and garlic and fry for 10 seconds.
- Add celery and spring onion whites, cook for about 30-40 seconds and add all the vegetables.
- Heat should be high and keep stirring the vegetables so they are evenly cooked.
- After approximately 3-4 minutes ,when the vegetables start to get a little brown on edges, add schezuan sauce.
- Mix it with vegetables nicely and then add soy sauce and vinegar.
- Give it a good mix and add rice .
- Season with salt and pepper and toss the rice nicely so the sauce coats the rice evenly.
- Taste and adjust the seasonings.
- Garnish with spring onion greens and serve hot.
