If you are looking for something quick and nutritious to make, then this sandwich will tick all the boxes!! Loaded with goodness of hummus and vegetables ,it will be ready in no time.
Hummus is a creamy, thick spread made primarily from mashed chickpeas and few other ingredients. In addition to being a good source of protein and fibre , chickpeas used in hummus are high in iron, folate , phosphorus and B vitamins. It can be a particularly good snack for vegetarians and vegans .
Lets see how to make this delicious and filling sandwich!
Servings: 2 Sandwich
Ingredients:
- 4 Slices of bread ( whole grain or white)
- 4 Tbsp of hummus (store bought)
- 1 firm tomato sliced in thin slices
- 6 slices of pickled cucumber (store bought)
- few salad leaves
- 6-7 falafels (store bought or made from ready made mix which is available in most supermarkets)
- Salt and pepper
Method:
- Prepare all the ingredients
- Toast the bread if you prefer or leave it untoasted. I left it untoasted.
- Apply 1 tbsp of hummus on each slice of bread.
- On one slices of bread add a layer of salad leaves and top with thin slices of tomato.
- Sprinkle salt and pepper on tomato slices and add pickled cucumber slices.
- Press falafel a little bit between the palm of your hands and add on top of cucumber slices
- Add the second piece of bread, hummus side down.
- Slice in half and serve .

* I used traditional hummus. Any flavour of hummus can be used. Feel free to play around.
* I didn’t have roasted red peppers at that time but I think they will also taste good in this.
