Atte ka halwa is a popular North Indian age-old recipe prepared mainly with ghee , whole wheat flour and sugar. This melt in mouth, delicious halwa is same as kada prasad or karah prasad given in gurudwaras as prasad. As it is made with lots of ghee and sugar, this halwa is definitely indulgent and we have it on special occasions only , like navratri or diwali. Ghee is the soul of this halwa, do not compromise on the quantity of ghee or it will not have the perfect taste and texture.
This halwa is very quick and simple to make and can be made with few pantry staples. The only important thing to keep an eye on is the browning of flour , it needs to be roasted on a low to medium flame, you may get raw taste if not sufficiently roasted or burnt taste if over roasted! It just needs a bit of patience and supervision!! This halwa becomes very solid in the fridge as ghee solidifies, hence it is best served warm, cold halwa doesn’t taste that good . You can heat it up in microwave for few seconds.

Ingredients:
- Ghee: 1/3 cup
- Whole wheat flour/Atta: 1/2 cup
- Sugar: 1/2 cup
- Cardamom powder: 1/2 tsp
- Water: 1 cup
- Almonds: 5-6 silvered (optional )
- Cashews: 5-6 chopped
Method:
- Heat Ghee in a heavy bottom pan or kadhai. Once the ghee melts, add whole wheat flour/atta to it and mix well to combine it with ghee.
- Saute on medium low heat, stirring continuously, until slightly browned ( approximately 4-5 minutes )
- Now, add the chopped nuts and fry until the color of the flour is turned golden brown and it becomes aromatic (approx 3-4 minutes). Keep an eye on the flour and don’t let it burn .
- Next, add water and cook until the water is absorbed by the flour.
- Add sugar and cardamom powder and cook for 2-3 minutes, while stirring continuously.
- Garnish the halwa with silvered almonds and pistachios.
- Serve warm or hot. Enjoy!!
