Rinse quinoa with plenty of water and drain with a fine sieve.
Cook 1 cup quinoa with 2 cups of water in a pan on medium heat until water is completely absorbed and quinoa is soft and cooked. Keep aside.
In the mean time, in a kadhai or a deep pan heat oil on medium heat. Once hot add mustard seeds, chana dal and urad dal. Fry on medium heat until dals are light golden.
Add peanuts and cashews (if using ) and saute for 2-3 minutes.
Next, add chopped onion and saute until onions turn translucent.
Add chopped green chillies, ginger, curry leaves and red chillies.
Add turmeric powder, hing, red chilli powder and stir for few seconds.
Fluff the cooked quinoa with a fork and add it to the spice mixture. Add salt and mix well.
Turn off flame and add lemon juice and green coriander. Toss well .
Serve hot.
