Lemon Quinoa ( Indian style )

Lemon Quinoa is a South Indian style lemon rice made with Quinoa and flavored with mustard seeds , curry leaves, ginger , green chilli and lemon. This recipe is similar to lemon rice except rice is replaced with quinoa which makes it a lot more nutritious than lemon rice.

Quinoa is a gluten free seed and it contains all the nine essential amino acids that our body needs. It is one of the healthiest foods and considered a super food for all its health benefits.

 

It tastes good at room temperature too so its a great dish to pack for lunch boxes. Its very quick to make and can be ready in about 20 mins and it will stay good in refrigerator for 2-3 days .

You will need :

  • Quinoa : There are two types of Quinoa available in the market, red and white. I used white as its easily available. Wash 2-3 times before using. Cook until soft. Don’t overcook it or it will become mushy.
  • Oil: You can use any oil . I used sunflower oil.
  • Nuts/Lentils : Cashews or Peanuts can be used for an extra crunch . I have used moong dal and urad dal.
  • Spices and Seasonings: I have used mustard seeds , curry leaves , hing , ginger and green chilli.
  • Veggies: I have used Onions. You can use carrots , green peas etc.
  • Lemon juice and fresh Coriander

Ingredients
  

  • 1 Cup Quinoa
  • 2 Cups Water
  • 1 tsp mustard seeds
  • 1 tsp urad dal
  • 1 tsp chana dal
  • 2 tbsp peanuts
  • 2-3 green chillies chopped
  • 1 onion chopped finely
  • 1 dried red chillies
  • 1 pinch Asfoetida (hing) (skip if making gluten free )
  • 6-7 curry leaves
  • ½ tsp red chilli powder
  • ½ tsp turmeric powder
  • Salt According to taste
  • ½ inch ginger chopped
  • 2 tbsp fresh coriander chopped
  • Few Cashew nuts (optional)
  • 2 tbsp Lime juice

Instructions
 

  • Rinse quinoa with plenty of water and drain with a fine sieve.
  • Cook 1 cup quinoa with 2 cups of water in a pan on medium heat until water is completely absorbed and quinoa is soft and cooked. Keep aside.
  • In the mean time, in a kadhai or a deep pan heat oil on medium heat. Once hot add mustard seeds, chana dal and urad dal. Fry on medium heat until dals are light golden.
  • Add peanuts and cashews (if using ) and saute for 2-3 minutes.
  • Next, add chopped onion and saute until onions turn translucent.
  • Add chopped green chillies, ginger, curry leaves and red chillies.
  • Add turmeric powder, hing, red chilli powder and stir for few seconds.
  • Fluff the cooked quinoa with a fork and add it to the spice mixture. Add salt and mix well.
  • Turn off flame and add lemon juice and green coriander. Toss well .
  • Serve hot.
