Cheesy Palak Paneer Sandwich

 

Palak Paneer Sandwich is a healthy and nutritious sandwich made with spinach , paneer and aromatic spices. Its gently spiced , cheesy and with coriander chutney smeared inside , you will get an explosion of flavors in each bite. This simple and quick sandwich can be eaten for breakfast, a light lunch or a tasty tea time snack. It is rich in protein and very good for kids. You can pack these sandwiches in the lunchboxes or take these for picnics and everyone will love these.

 

For the filling you need to make Palak Paneer bhurji, which is very quick to make or can be made a day before. When the bhurji is ready , the sandwich is a breeze to make.

Green Chutney: It can be made at home or you can use store bought. At home it can be made by grinding a bunch or coriander with an onion, a tomato, 2-3 green chillies, lime juice, 1/2 tsp sugar and salt.

Tomato Ketchup: I used store bought Ketchup

Cheese Slices: You can used processed cheese slices, Mozzarella slices  or Cheddar slices. You can skip the cheese if you don’t like it. I normally add Cheese when I am making sandwiches for kids.

Bread: Any sturdy bread can be used . I used seeded bread but you can use white bread if you are making for kids.

Butter: For toasting the sandwich.

 

 

Palak Paneer Bhurji Sandwich

Ingredients
  

  • 4 Slices Bread ( Whole Wheat/ white or Sourdough
  • 1/4 Cup Green Chutney
  • 1/4 Cup Tomato Ketchup
  • 2 Slices Cheese ( Cheddar or Mozzarella) (optional)
  • 1/2 Cup Palak Paneer Bhurji
  • 3 Tbsp Butter/Ghee For toasting the sandwich

Instructions
 

  • First of all, apply thin layer of butter on inside of the bread slices. If you are using white bread , applying butter before applying chutney will prevent it from getting soggy. If you are using sourdough or crusty bread you can skip this step.
  • Next , apply green chutney on inside of 1 bread slice and tomato ketchup on inside of another slice.
  • Put a thick layer of paneer bhurji evenly on 1 slice and top with the cheese slice. You can skip the cheese if you don't like it.
  • Close the sandwich with another slice . Brush little butter on top . Similarly , prepare another sandwich.
  • Now, grill the sandwich in a hot grill or a pan for 3-4 minutes until golden and crispy. Cut into traingles and serve with chuteny of your choice.
