Veggie and hummus Sandwich

 

A veggie and hummus sandwich is stacked high with crunchy vegetables and creamy hummus and it makes the perfect, healthy, fiber rich lunch or dinner . Bursting with flavor and juiciness, this sandwich is almost no cook and ready in less than 15 minutes.

Hummus is a fantastic sandwich spread which is full of plant based protein to keep you full for hours. This veggie hummus sandwich is perfect for on the go lunches to take to work, picnics or school. They can be easily customizable according to your preferences.

 

Ingredients you will need :

In this recipe, bread is slathered with creamy hummus and then layered with veggies and pickle. The sandwich you will get is healthy, delicious and satisfying.

  • Bread: We like whole grain bread for its fiber boosting benefits. You can use sourdough or sandwich bread too.
  • The spreads: We used mashed avocado and hummus both for the sandwich. If you don’t have avocado you can use hummus on both slices. Our favorite hummus is roasted red pepper hummus which can be bought easily from the market. You can use shop bought or make at home. There are many flavors available in the market, you can use according to your taste. I feel regular or roasted red pepper is the best for sandwiches.
  • Vegetables : A lot of vegetables can be used as per your taste like lettuce, onions, tomato, grated carrots, olives and so much more. I used cucumbers and tomatoes.
  • Pickled Vegetables: They add sweet, salty and tangy flavor to the sandwich and are easily available in market. I used pickled cucumbers and jalapenos but you can used any according to your taste.
  • Salad greens : They add a nice crunch to the sandwich. You can use rocket, mixed leafy vegetables, spinach or micro greens. Completely optional!
  • Cheese: I didn’t use any but you can add cheese if you prefer.

Tips and Tricks:

Remove excess moisture from the raw vegetables and pickled vegetables by squeezing them in paper towel or clean dish towel. It will prevent the sandwich from getting soggy.

 

Veggie and Hummus Sandwich

Ingredients
  

  • 4 Slices of your favorite bread
  • 1 Large tomato sliced thinly
  • ¼ Medium English cucumber sliced thinly
  • 4-5 Slices Pickled cucumber (You can use more if you have burger gherkins as they are round )
  • 2-3 Tbsp Pickled Jalapenos ( you can use any pickled vegetable of choice)
  • 1/2 Cup Hummus (I used Roasted red pepper hummus )
  • 1 Small Avocado
  • 1 Cup Salad greens
  • Salt and Pepper as per taste
  • 1 Tsp Lime Juice

Instructions
 

  • First of all, peel and mash the avocado. Add some salt, black pepper and lime juice to it. Keep it aside.
  • Toast the bread if you prefer or leave it as it is. I like to toast the bread.
  • Meanwhile place the pickled vegetables, salad greens and sliced tomatoes on a paper towel to absorb excess moisture.
  • Next, spread hummus generously on one slice of the bread and mashed avocado on another slice.
  • Layer salad greens first on top of hummus, then cucumbers and tomatoes . Sprinkle little salt and black pepper.
  • Next , put the pickled vegetables and close the sandwich with the slice which has mashed avocados.
  • Repeat the same steps for another sandwich. Slice in half and serve.
  • Enjoy!!
