Chickpea Stuffed Pitta Sandwich With Hummus

 

Packed with veggies and chickpeas, these pitta sandwiches with hummus is a delicious , healthy and easy meal that comes together very quickly! With great flavor and lots of texture, you get your vegetables and protein in one neat package ! It will keep you full and satisfied for long. These pitta sandwiches has all the flavors of falafels, without the hassle of making and frying them.

You can use the same ingredients and transform them into a wrap or make a big, fresh salad with spiced chickpeas. All the ingredients can be prepared ahead of time and kept until ready to assemble. I have used cajun seasoning for the chickpeas, you can try shawarma seasoning as well or if you have none, I have given the list of spices below which you can use.

Assemble the sandwich only when you are ready to serve, otherwise they can become soggy. These sandwiches can easily be customised to suit your preference. Add any topping of vegetable you like and skip the ones you don’t prefer. You can use whole wheat or white pittas.

Cuisine: Middle Eastern    Course: Main    Serves: 2-3

Ingredients:

  • Onions: 2, medium sized, thinly sliced
  • Red Pepper: 1, thinly sliced
  • Chickpeas: 1 can 400 gms (drained and rinsed ) OR soak 3/4 cup chickpeas overnight and cook the next morning.
  • Olive oil: 3 tbsp
  • Salt and Pepper: as per taste
  • Cajun seasoning/Shawarma seasoning: 3 tbsp
  • Lettuce : 1 cup, shredded
  • Pickled cucumbers: 1/2 cup, sliced in rounds (optional )
  • Hummus: 200 gms/ 3/4 cup (approx )  ( I used store bought )
  • Pitta bread: 2-3

To serve:

  • Pickled chillies
  • Olives

If you don’t have shawarma/cajun seasoning, use the below spices:

  • Coriander Powder: 1 tsp
  • Cumin powder: 1/2 tsp
  • Garlic Powder: 1/2 tsp
  • Ground ginger: 1/2 tsp
  • Black pepper powder : 1/4 tsp
  • Salt

For Tahini Yogurt Sauce:  (Optional )

  • Tahini: 2 tbsp
  • Greek Yogurt: 1/4 cup
  • Lemon juice: 1 tbsp
  • Garlic Powder: 1/2 tsp  OR garlic clove: 1, grated
  • Parsley: 1 tbsp, chopped
  • Salt and Pepper
  • You can add 1 tsp of harissa for  a spicy kick!

Method:

  • Heat olive oil in a non stick pan. Once hot, add sliced onions and stir fry for 1 minute.
  • Next, add sliced red peppers and mix. Cook for 3-4 minutes on medium heat.
  • Add cooked chickpeas and mix. Now, add the seasoning/spices , salt and pepper.
  • Give everything a good mix and cook on medium heat for 2-3 minutes.
  • Take off from heat and keep aside.

To make Tahini Yogurt Sauce:

  • Mix all the ingredients together.
  • Tahini gets thick when mixed, so adjust consistency by adding a little cold water.
  • Check the seasonings and adjust according to your taste.

Assembling the Chickpea sandwich:

  • Warm the pitta bread for about 15-20 seconds in the microwave. I used store bought pitta.
  • Next, cut the pitta in half. Open the pocket and spread 1 tbsp of hummus in it.
  • Add some shredded lettuce and 2-3 tbsp of chickpea mix.
  • You can also add some sliced pickled cucumbers.
  • Drizzle the tahini yogurt sauce and serve immediately.
  • Repeat with remaining pitta halves.
  • Serve with extra hummus, tahini sauce , pickled chillies and olives.
  • Enjoy!
