Mexican Fajitas with Paneer

 

Mexican Fajita is a vibrant and flavorful dish which is super quick to make and tastes absolutely delicious! Traditionally made with meat, this vegetarian version will tell you that fajitas don’t need meat to be satisfying ! These vegetarian fajitas are made with colored bell peppers, onions and paneer tossed with smoky fajita seasoning and then topped with salsa, sour cream, guacamole and jalapenos. Beautiful colors and fresh, spicy and  tangy flavors make these fajitas incredibly flavorsome and delicious!!

These aromatic fajitas will be ready in less than 30 minutes,  ideal for busy weeknights or large parties! Even kids love these fajitas!

Few Tips for gloriously tasty fajitas:

  • Medium sized tortillas are best for fajitas! You can use corn fajitas, white fajitas, whole wheat ones or even gluten free ones. I have used medium sized white tortillas.
  • Shop bought fajita seasoning saves a lot of time and effort ! You can also make your own seasoning, I will give the recipe below.
  • If you don’t have sour cream, you can use thick full fat Greek yogurt! It works really well.
  • You can skip any topping you don’t prefer! If you don’t have guacamole, skip it ! These fajitas are very forgiving and easily customizable.

Cuisine: Mexican  Course: Snack/Main   Serves: 2-3

Ingredients:

  • Green Pepper:  1 medium sized , sliced thinly
  • Red Pepper/Yellow Pepper : 1, sliced thinly
  • Onion: 2,medium sized, thinly sliced
  • Paneer: 250 gms, sliced
  • Olive oil  : 2 tbsp
  • Garlic: 3 cloves, minced
  • Sweet Corn : 1/2 cup ( I used frozen sweet corn)
  • Fajita Seasoning:  3 tbsp ( or more if you want more spicy)
  • Salt: according to taste
  • Lime Juice: 1tsp
  • Fresh green coriander:  a handful, chopped

Toppings:

  • Salsa: 1 cup (  I used store bought jars)
  • Pickled Jalapeno slices : 1/2 cup
  • Mexican/ Cheddar Cheese : grated , 1 cup
  • Lettuce: shredded, 1 cup
  • Guacamole: 1/2 cup (store bought or home made )
  • Sour Cream: 1/2 cup ( full fat Greek yogurt can be used instead of sour cream )

If you don’t have fajita seasoning you can use:

  • Cumin powder: 1 tsp
  • Black Pepper: 1/4 tsp
  • Paprika: 2 tsp
  • Dried Oregeno: 1 tsp
  • Chilli Powder: 1/2 tsp
  • Garlic Powder: 1 tsp

For Guacamole:

  • Avocados: 2 , medium sized
  • Onion:  1/2 small sized, finely chopped
  • Green Chillies: 1-2, finely chopped
  • Tomato: 1, medium sized, finely chopped
  • Fresh coriander: 1-2 tbsp, chopped
  • Lime: 1
  • Salt and black pepper: according to taste

 

Method:

  • Heat olive oil in a non stick pan or skillet. Once hot, add chopped garlic and fry till the edges start to get a little golden.
  • Add sliced onions and peppers and stir fry on medium to high heat till the peppers are crisp tender.
  • Add corn and give everything a good mix. Next , add salt and fajita seasoning.
  • Add paneer and mix. Cook for 2 minutes on medium heat.
  • Add lime juice and chopped coriander. Check for seasonings and switch off the flame.
  • Keep it aside

For Guacamole:

  • Peel the avocados and remove the pit. Mash the avocados and stir in rest of the ingredients.
  • Mix to combine.Adjust the seasonings.

How to assemble:

  • Warm tortillas according to package instructions.
  • First, put some shredded lettuce in the middle. Next, spoon some onion pepper mix on it.
  • Top with some salsa, pickled jalapeno slices, sour cream, guacamole , grated cheddar cheese.
  • You can eat it like that or roll it and lightly grill in a panini press or a toaster.
  • Enjoy!
