Almond Butter Chocolate Overnight Oats

 

Chocolate Overnight oats with almond butter is a  nutritious, quick and make ahead breakfast that taste like dessert, without any refined sugar at all ! Its a breakfast worth waking up for! Its a hearty breakfast made up of all good for you ingredients like oats, almond butter and cocoa powder and the best part is , you don’t have to do anything in morning! The preparation is done the night before and in morning you just have to grab the bowl and dig in!

 

 

 

If you are making it in jar, you can take the breakfast to your work as they travel well! Rolled oats are full of protein,carbs, iron and fiber.  Add a handful of chopped nuts, fruits or chia seeds to the top to make it a complete meal and it will keep you full till lunch time. They also make a great post-work out snack, specially if you add some protein powder.

 

How to make overnight oats?
Rolled oats are soaked overnight  in milk of choice ( for eg normal milk or any plant based milk ) with other ingredients and flavors , let the oats absorb the liquid and the oats become soft and chewy in morning. You can adjust the amount of milk according to the desired consistency in morning. There are endless possibilities of flavors like nut butters, fruits, protein powder etc.  You can always play around with flavors and choose what you like most! I have used almond butter, you can use peanut butter or cashew butter too. It can be refrigerated for up to 3 days.
They are generally eaten cold, but you can warm them up in a microwave or stove to the desired temperature! You might need to add more milk if warming the oats.

Ingredients:
  •  Rolled Oats: 1/2 cup ( Rolled oats are best, Instant oats are highly processed and not good for overnight oats recipe )
  • Almond butter: 3 tablespoons
  • Maple syrup or honey : 1/2 tbsp ( more if you prefer it sweeter)
  • Cocoa Powder : 1 and 1/2 tbsp
  • Milk : 3/4 cup ( normal or any plant based milk )
  • Chia seeds: 1 tsp ( optional )

Optional Toppings:

  • Sliced Bananas
  • Chopped Almonds
  • Dried Cranberries
  • Dark Chocolate shavings
  • More Almond Butter

Method:

  • Add oats, milk, almond butter, maple syrup and cocoa powder in a jar or any other container. Stir well to combine or place the lid on the jar and shake well until all ingredients are thoroughly combined.
  • Let it sit in the refrigerator covered for at least 4 hours or overnight.
  • The next morning, adjust the consistency ,top with desired toppings and enjoy!! (if you prefer warm, heat it up in microwave before adding the toppings)

    • I have used Meridian Almond butter here, though any unsweetened almond butter will work ! you can try unsweetened peanut butter as well !
