Mexican Bean Burritos/Vegetarian Burritos

Burritos are very famous Mexican street food in which tortillas (Mexican flat bread) are filled with Mexican style rice, refried beans, crunchy lettuce, tangy salsa and cheese.They are served with more salsa, sour cream and guacamole ! These mouth watering burritos are very filling as they are high in protein and pack the most delicious and rich flavors! They are almost a balanced and complete meal on their own , and will keep you full for hours.

 

You can prepare the rice the night before and then you just have to assemble the burritos when you are ready to eat! This makes burritos the perfect party food that is gloriously tasty and will be ready in minutes once the guests arrive! There is lot of scope for innovation, you can easily skip the things you don’t have or add things which you prefer! These burritos are easily customizable!

 

Normally plain rice is used with some coriander and lime juice, and then black beans are added on top, however I gave a little twist and made Mexican style beans and pepper rice which are absolutely delicious on their own, but when you put them in a tortilla , with toppings like salsa , jalapenos and cheese, they become irresistible!  My kids just love these and I insist you to try this recipe once and you will be making it again and again.

Cuisine: Mexican   Course: Main/ Starter    Serves: 2-3   Makes: about 6-8 tortillas

Ingredients:

For Mexican style rice:

  • Brown rice: 1 cup
  • Olive oil: 2 tbsp
  • Garlic: 3-4 cloves, minced
  • Onion : 1 medium sized, chopped
  • Cherry/Plum tomato: 10-12 , halved
  • Pepper: 1 red/green, chopped into small pieces
  • Black beans : 1, 400 gms can , drained and rinsed (pinto beans or red kidney beans can also be used: just soak 1/4 cup of beans overnight and cook them )
  • Spring Onions: 4-5 , chopped, keep white and green part separate
  • Corn: 1/2 cup ( I used frozen )
  • Taco seasoning: 2 tbsp
  • Salt: according to taste
  • Black Pepper: 1/2 tsp
  • Lime juice: juice from 1/2 lemon
  • Fresh coriander leaves:  2 tbsp, chopped

Other Ingredients:

  • Tortillas: 6-7, preferably bigger ones like 8 or 10 inch
  • Refried beans : 1 cup (store bought )
  • Salsa: 1.5 cups
  • Lettuce: 1 cup, shredded
  • Pickled Jalapenos; 1/2 cup (optional )
  • Guacamole or avocado sauce: 1 cup  (Recipe of avocado sauce is here ) 
  • Grated Cheddar Cheese: 1 cup

Method:

Prepare Mexican rice:

  • First of all, cook brown rice according to package instructions and keep the cooked rice aside.
  • Heat oil in a broad non stick pan, add onions and saute on medium heat for 1 minute.
  • Next, add spring onion whites and garlic, and cook for 1 more minute.
  • Add corn and chopped pepper and mix nicely. Cook on medium heat for 3-4 minutes, till the pepper is cooked.
  • Next , add tomatoes and mix. Cook for 1-2 minutes, till tomatoes are a bit soft.
  • Add taco seasoning and give everything a good stir.
  • Now, add cooked rice and beans and mix everything nicely. Add salt and pepper.
  • When everything is well combined, add spring onion greens and coriander.
  • Squeeze half a lemon in it and mix.
  • Taste and adjust the seasonings.
  • Keep it aside.

Assembling the Burritos:

  • Warm the tortillas in microwave or griddle pan (according to the package instructions ) so that they are soft and pliable.
  • Heat the refried beans according to instructions on can.
  • Place a tortilla on a clean and dry surface and put 1 tbsp of refried beans on 1 side of tortilla , not in the centre as we will start rolling from the side.
  • Layer lettuce leaves on top of refried beans . Spoon 2-3 tbsp of Mexican rice and top with 1-2 tbsp of salsa, generous amount of cheese and jalapeno slices.
  • Wrap the burritos by folding the short sides first and then folding the long side by gently pushing the filling inside. There are many videos on you tube on how to wrap a burrito! You can check one here  !.
  • You can serve the burritos like this or carefully grill them on a griddle or tawa, seam side down. I toast them lightly in my Panini press.
  • Repeat with the remaining ingredients to make rest of the burritos.
  • Cut in half and serve immediately with more salsa, avocado sauce or Mexican Chipotle sauce.
