Paneer and babycorn Frankie

Another popular street food from Mumbai, frankie is the perfect snack for everyone!! Frankie is exciting, flavorsome, super tasty and easily customizable! These tongue tickling frankies are made by layering chapatis with a range of fillings, green chutney, chopped onions, pickled chillies and frankie masala . There is no right or wrong filling, you can experiment with whatever takes your fancy! Traditionally potato mix or paneer is used, but feel free to try cutlets or salads of your choice! We are using paneer jalfarezi as filling today!

Frankie Masala is easily available in markets , however it can be made quickly at home . I have written the recipe below. It takes hardly 5 minutes to make the masala . Also, feel free to try different sauces as the possibilities of making different types of frankie are endless!!

Cuisine: Indian  Serves: 2-3  Course: Main/Snack

Ingredients:

For Chapatis:

  • Refined flour/Maida: 1 cup
  • Whole wheat flour/Atta: 1/2 cup
  • Salt: 1 tsp
  • Ghee: 1 tbsp

Frankie Masala:

  • Turmeric powder: 1 tsp
  • Coriander powder: 1 tbsp
  • Roasted cumin powder: 1 tbsp
  • Garam masala: 1 tsp
  • Red chilli Powder: 1 tsp
  • Chaat masala: 3 tbsp

Pickled Chillies:

  • Vinegar: 3 tbsp
  • Green chillies: 3, sliced thinly in rounds
  • Salt: a pinch

Filling:

Preparation:

For Rotis/Chapatis

  • In a mixing bowl, add refined flour, whole wheat flour , oil and salt and make a soft dough using water as needed. Make a soft and pliable dough and keep it aside covered for 30 minutes.
  • After the resting time, knead the dough again a little. Divide it into 5-6 equal portions.
  • Make 6 rotis/chapatis and don’t over cook them, just till a few brown spots appear.
  • Keep them aside covered in a tissue paper or clean cloth to keep them warm.

For the filling:

  • While the dough is resting , make paneer and babycorn jalfarezi as per the recipe here. 
  • Keep it aside to cool it down a little bit.

For pickled chillies:

  • Add chopped green chilles and salt to 3 tbsp vinegar in a small bowl. Mix lightly.

For Frankie masala:

  • Mix all the spice powders listed under frankie masala in a small jar. Close the lid and mix vigorously.

How to proceed to make frankie:

  • Place 1 roti/chapati on a clean dry surface and spread green chutney over it.
  • Add some lettuce in the centre of chapati.
  • Next, take 2 tbsp of paneer and babycorn mix and put it in a single row lengthwise in the centre of roti.
  • Sprinkle some chopped onions of top of paneer mix.
  • Add some green chillies in vinegar on top.
  • Sprinkle frankie masala generously.
  • Roll it up tightly.
  • You can serve it like this ,or if you want ,you can make it crispy by lightly frying the wrap on a non stick pan/griddle in few drops of oil by keeping the seam side touching the tawa, so the filling doesn’t come out. Cook for a few seconds only. Don’t overcook.
  • Wrap it in a tissue paper and serve immediately.
  • Enjoy!!
