Vegetable Paniyarams/Appe

Vegetable Paniyarams ,also known as appe is a yummy snack  made from left over idli batter. These are made using special pans called paniyaram pans. Paniyarams are crispy on outside and soft from inside, and can be enjoyed as breakfast or tea time snack by kids and grown-ups alike.

Made from rice and urad dal as the main ingredient, paniyarams are a nutritious snack. Urad dal, high in protein, is  packed with nutrients like iron, folic acid ,calcium, magnesium and potassium. They have added benefits of vegetables too, like carrots which are rich in  Vitamin A, K and several B-vitamins. Kids wont even notice they are eating vegetables with appe!!

Type : Vegetarian   Serves: 4

Ingredients:

  • Left over Idli/dosa batter: 3 cups
  • Onion chopped finely : 1
  • Ginger chopped finely/grated: 1/2 tsp
  • Carrot grated: 1 medium
  • Green pepper/capsicum chopped finely: 1
  • Green chilli chopped finely : 1 (can skip if making for kids )
  • Turmeric powder: 1/2 tsp
  • Red chilli powder: 1/4 tsp (optional)
  • Salt: to taste
  • Oil: 1 tbsp
  • Rai / mustard seeds: 1/2 tsp
  • Urad dal: 1 tsp
  • Curry leaves: 5-6
  • Hing/Asfoetida: 1/8 tsp
  • Coriander leaves chopped finely: 1 tbsp

Method:

  • Wash urad dal and keep it aside for 10 mins.
  • Heat 1 tbsp of oil in a non stick pan, add mustard seeds and when they splutter add hing and urad dal.
  • When dal turns a little golden , add ginger, green chilli and curry leaves.
  • Saute for 10-20 seconds.
  • Add onions and saute for 30 seconds more.
  • Add carrots and green pepper.
  • Saute till onions are pink and vegetables are cooked.
  • Add salt, turmeric powder and red chilli powder.
  • Add chopped coriander leaves.
  • Let it cool.
  • Now mix the above mixture in Idli batter.
  • Grease paniyaram pan with few drops of oil and heat it for a min, pour the batter.
  • Cook covered for 2-3 minutes on medium low flame.
  • Flip with help of a skewer/toothpick and cook until golden on both sides.
  • Serve hot with onion-tomato chutney or coriander chutney
  • Enjoy!!
